Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Chocolate Creams
Ingredients
Directions
Make the mixture
Dissolve the gelatine in warm milk in a saucepan.
Add sugar, butter, glucose, and cream of tartar; stir over medium heat until it boils.
Remove from heat and stir until it reaches the desired consistency for rolling.
If the mixture is not thick enough, return it to the heat and boil again.
Shape and coat
Butter your hands and roll the mixture into balls.
Melt the confectioner's chocolate and roll the balls in it using a long hat-pin.
Place the coated balls on waxed paper to dry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the warm milk and sugar mixture so it holds its shape when rolled.
- Sugar
- Provides sweetness and bulk, and helps the mixture firm up as it cools.
- Glucose
- Keeps the sugar from crystallising, giving a smoother, softer centre.
- Confectioner's chocolate
- Forms the outer coating that adds flavour and a crisp shell.
The step that matters
Judging the consistency before rolling. If the mixture is removed from heat too early it stays too soft to shape, and if cooked too long it becomes stiff and hard to roll. Checking its firmness and reheating only when needed keeps the balls workable.
