Why it works: Potato and pork are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 2,668 recipes. Both carry sotolon, which smells curry, maple. The science ↓
Hashed Meat and Potatoes
Ingredients
Directions
Prepare the meat
Soak the bits of cooked meat in cold water.
Stew the soaked meat until tender in just enough water to cover them.
Chop the meat finely.
Mix the hash
Mash an equal or larger quantity of hot potatoes.
Mix the mashed potatoes with the chopped meat.
Season the mixture with coarse sea salt.
If the mixture is too dry, add a little of the stewing water.
Brown and serve
Fry a slice of fat pork in a skillet.
Add the rendered fat to the mixture.
Brown the hash in the same skillet.
Turn the hash out, brown side up, onto a hot platter.
Keep the hash warm for serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Bits of cooked meat
- Provides the main savoury flavour and bulk of the hash.
- Hot potatoes
- Mashed, they bind with the meat and give the hash a soft, moist body.
- Fat pork or butter
- Fat carries flavour and helps the hash brown well in the skillet.
The step that matters
Brown the hash in the skillet. Browning needs enough fat and an undisturbed hot surface to form a crust; a too-wet mixture steams instead, so the hash stays pale and soft.
