Preserved Crab-apple

Ingredients

Directions

  1. Wipe the crab-apples clean, leaving the stems on. Prick them well.

  2. Place the crab-apples in a pot and cover with water. Boil slowly until soft, but not breaking apart.

  3. Drain the softened crab-apples.

  4. In the pot, add an equal weight of sugar and enough water to cover the bottom. Boil for 20 minutes, skimming if necessary.

  5. Add the crab-apples to the syrup and boil slowly for 15 minutes.

  6. Transfer the crab-apples to glass jars. If the syrup is not clear, boil it until it is clear, then pour it over the fruit.

  7. Seal the jars tightly.
