Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Adds body and gelatine from bones and connective tissue, giving the broth richness.
Calves' feet or cow-heel
Releases gelatine during long stewing, giving the consommé a silky mouthfeel.
Poultry remains
Contributes extra flavour and gelatine from bones, feet and necks.

The step that matters

Skim the surface as it comes to a boil. Impurities and coagulated proteins rise to the surface and would cloud the broth if left in. Removing them early keeps the final liquid clear.

Swap the clove

How well each one fits the dish's main ingredients (veal, carrot, onion):

  1. Celeryfits better
  2. Parsleyfits better
  3. Cuminfits better
  4. Clovethe original

Fit is the average pairing score against veal, carrot, onion. Candidates are from the same food group and used in at least 100 recipes.
