What each ingredient does

Flour
Thickens the stock into a sauce as it cooks with the fat.
Butter or bacon
Provides the fat that cooks the onion and carries flavour into the sauce.
Onion
Sweetens and deepens the sauce as it browns and softens.
Stock or veal jus
Supplies the liquid base that gives the sauce its body and savoury flavour.
French mustard
Adds sharp, tangy flavour that balances the richness of the sauce.

The step that matters

Cook the onion until lightly browned before adding liquid. Browning the onion and flour builds deeper flavour through the Maillard reaction, and cooking out the flour's raw taste keeps the sauce from tasting pasty. Adding stock too early leaves these flavours undeveloped.
