Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main body, sweetness and bulk of the puree.
Butter
Adds richness and a smooth, silky mouthfeel to the finished puree.
Onions
Add savoury depth and aroma as they soften with the carrots.
Veloute
Thickens the puree and adds body so it coats the entree.

The step that matters

Reducing a thin puree. If the puree is too thin, it will not coat the entree. Reducing it on the fire evaporates water and concentrates the vegetables, thickening the puree. Stir gently so it does not scorch on the base of the pan.

Swap the carrot

How well each one fits the dish's main ingredients (butter, onion, sugar):

  1. Potatofits better
