Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the beef tongue in water for 24 hours, changing the water several times.

  2. Scald the tongue to remove the skin.

  3. Lard the tongue with bacon seasoned with salt, pepper, nutmeg, parsley, and shallots.

Stew and roast

  1. Stew the tongue with stock, slices of bacon, sweet herbs, onions, and cloves until three-quarters cooked.

  2. Remove the tongue, let it cool, and lard it inside with large pieces of bacon and outside with small pieces.

  3. Roast the tongue at 400°F (200°C) for about 1 hour.

Serve

  1. Serve with sauce piquante.

What each ingredient does

Beef tongue
Main meat that becomes tender through long soaking and slow stewing.
Bacon
Adds fat and savoury flavour as it melts into the lean tongue during roasting.
Shallots
Add mild aromatic sweetness to the seasoned bacon larding.

The step that matters

Stew until three-quarters cooked before larding and roasting. Stopping the stew at about three-quarters done leaves enough cooking left for the roast. Taking the tongue further would leave it dry and overcooked after roasting, while stopping too early leaves it tough.
