Why it works: Mushroom and bread are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 2,536 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Sweetbreads En Caisse
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Prepare and lard the sweetbreads as previously directed.
Chop fine herbs and mushrooms, then mix with salt, pepper, and oil.
Pour the herb mixture over the sweetbreads.
Assemble
Make several cases from strong paper and oil each case.
Place a few bread crumbs and some seasoning at the bottom of each case.
Add the sweetbreads and top with more seasoning.
Bake and serve
Bake in an oven at 400°F (200°C) or place on hot ashes until they are nicely colored.
Serve in the cases.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Sweetbreads
- Form the tender main body of the casserole, becoming soft and delicate when cooked.
- Mushrooms
- Add moisture and savory, earthy flavor to the herb mixture.
- Bread crumbs
- Soak up juices at the base of each case and help the dish hold together.
- Oil
- Carries the herbs and seasoning and helps the surface brown in the oven.
The step that matters
Bake until nicely colored. Sweetbreads need enough heat for the surface to brown while the inside stays tender. Too little heat leaves them pale and soft; too long can dry them out.
