Black Puddings

Ingredients

Directions

  1. Stew chopped onions in hog's lard.

  2. Add diced pork fat and the blood of the pig, seasoned with parsley, pepper, salt, and allspice; mix well.

  3. Clean the puddings, ensuring there are no holes.

  4. Fill the puddings to your desired length and tie them with twine.

  5. Boil the puddings for 20 minutes; they are done when fat oozes out upon pricking.

  6. Hang the puddings to cool; when ready to use, boil to warm, fry in thick slices, or serve cold in slices.
