What each ingredient does

Duck
Forms the main body of the dish, becoming tender through slow, moist stewing.
Duck liver
Adds richness and a deep, savoury body to the sauce once pounded and stirred in.
Anchovies
Contribute a salty, savoury depth that blends into the sauce and rounds out the flavour.
Butter
Adds fat and richness, carrying flavour when frying the liver and binding the pounded mixture.
Wine
Adds acidity and aroma to the stewing liquid, helping to develop the sauce's flavour.
Stock
Provides moisture so the duck stews gently without drying out.

The step that matters

Stewing the duck slowly. Long, gentle stewing in liquid breaks down the connective tissue in the duck, so the meat becomes tender. Too much heat can toughen the meat and reduce the liquid too fast, leaving the sauce thin or dry.

Swap the lemon

How well each one fits the dish's main ingredients (liver, butter, wine):

  1. Applefits better
  2. Grapefits better
  3. Lemonthe original
  4. Plumfits about as well

Fit is the average pairing score against liver, butter, wine. Candidates are from the same food group and used in at least 100 recipes.
