Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Methods of Mixing Flour, Etc
Ingredients
Directions
Cut the butter into small pieces and gently dissolve it in half the milk in a saucepan over low heat, shaking well.
Add the remaining milk, salt, and sugar, then pour the mixture gradually into the flour at blood temperature (98°F).
Stir until smooth, adding more fluid if too thick.
Finally, stir in the beaten egg whites.
If using yeast, pour the dissolved butter mixture into the flour, form a batter, then add yeast and eggs.
Cover and let rise in a warm place.
If using baking powder, add all fluids cold.
