Crumpets

Ingredients

Directions

Make the batter

  1. Combine the roll mixture with 1 egg and enough new milk to make a smooth, thick batter.

  2. Let the batter rise until well risen, then gently beat it to remove lumps.

Cook the crumpets

  1. Fill a tea cup with batter from the top and pour it onto a greased bake-stone or iron plate over moderate heat.

  2. When the batter sets, turn it over with a tin slice until slightly browned.

  3. Transfer to a cooler part of the stone and repeat with more batter.

  4. As crumpets bake, place them on a clean cloth and cover lightly with another cloth until nearly cold.

Serve

  1. Toast lightly or place on a cake tin, cover with a wet cloth, and heat in the oven before buttering.

What each ingredient does

Roll mixture
Provides the flour base that sets into the crumpet's structure as it cooks.
Egg
Adds structure and richness to the batter, helping it hold its shape while cooking.
New milk
Supplies the liquid that hydrates the mix into a pourable, smooth batter.

The step that matters

Letting the batter rise before beating. The batter must rise well so gas bubbles create the open, holey texture of crumpets. Beating gently removes lumps without knocking out the air that the rise has built.
