Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Provide the main body and mild sweetness once boiled until soft.
Milk or cream
Adds moisture and a smooth, rich liquid base for the sauce.
Butter
Adds fat for richness and a smooth mouthfeel, and carries flavour.
Bread or flour
Thickens the sauce as its starch absorbs liquid and swells with heat.

The step that matters

Boil the mixture for 1-2 minutes. Starch from the bread or flour only thickens fully when heated, and a short boil cooks out its raw taste. Boiling too hard or too long can scorch the dairy or make the sauce separate.
