What each ingredient does

Pearl barley
Its starch thickens the water into a smooth, porridge-like gruel as it cooks.
Sugar
Adds sweetness to balance the plain, mild flavour of the barley gruel.
Butter
Adds richness and a smooth, rounded mouthfeel to the served gruel.

The step that matters

Boiling the barley in fresh water. The first brief boil and discarding of the water removes surface impurities and bitterness from the grain, so the final gruel tastes clean. Skipping it can leave the porridge tasting dusty or harsh.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (barley, sugar, butter, walnut):

  1. Figfits better
  2. Vanillafits better
  3. Coconutfits better
