What each ingredient does

Head (meat)
Provides the main body, flavor and gelatin-rich texture of the soup.
Fresh water
Forms the liquid base in which the meat slowly releases its flavor.
Sherry
Adds aromatic depth and a mild sweetness to the finished broth.
Lemon juice
Adds acidity that brightens the rich flavor of the broth.

The step that matters

Discarding the first boiled liquid. Boiling the head briefly and throwing away that water removes scum and impurities that would otherwise cloud the soup and taste harsh. Starting the long simmer with fresh water gives a cleaner, clearer broth.

Swap the lemon

How well each one fits the dish's main ingredients (meat, sherry):

  1. Figfits better
  2. Pineapplefits better
  3. Grapefits better
  4. Lemonthe original

Fit is the average pairing score against meat, sherry. Candidates are from the same food group and used in at least 100 recipes.
