Scalloped Oysters

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove the gills and hard white parts from the oysters.

  2. Put the oysters with their liquor in a saucepan and simmer for 10 minutes.

  3. Grease an earthenware dish or scallop shells with a little melted butter.

  4. Add a layer of bread crumbs about ½ inch thick and strain the oyster liquor over it.

  5. Place the oysters evenly on the crumbs and cover them with more bread crumbs, seasoned with pepper and salt.

  6. Spread a thick layer of butter on top and bake at 400°F (200°C) for 15 to 20 minutes.

  7. If needed, brown the top with a salamander.
