Potato Croquettes

Ingredients

Directions

  1. Mash or rub the steamed potatoes through a wire sieve.

  2. Add a little coarse sea salt and enough yolk of egg to make a stiff paste.

  3. Take a small amount of the potato puree and roll it into a ball.

  4. Dip the ball in egg, then coat it with lightly salted bread crumbs.

  5. For a nice crust, repeat the egg and crumb process.

  6. Place the croquettes in a wire basket and immerse in boiling fat.

  7. Shake the basket lightly until the croquettes are golden.

  8. Remove and place on paper to absorb excess fat before serving.
