Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Swells in milk and sets into a firm, sliceable base that holds the shape.
Milk
Cooks with the rice to give a soft, creamy body.
Egg yolk
Enriches the mixture and helps it bind when cooled and shaped.
Egg
Beaten egg forms a coating that helps the bread crumbs stick.
Bread crumbs
Form a crisp, golden outer crust when fried.

The step that matters

Fry in fat at the right temperature. If the fat is too cool, croquettes absorb grease and turn soggy; if too hot, the crumbs brown before the inside heats. Steady, moderately hot fat gives a crisp, golden crust.
