Ingredients

Directions

Prepare the beans

  1. Clean the coffee beans thoroughly.

  2. Roast the beans in a tightly closed cylinder over moderate heat until dark brown maroon.

  3. Grind the roasted beans coarsely as needed.

Brew

  1. Scald the coffee pot (biggin) before use.

  2. Add 1 tablespoon of ground coffee per person into the strainer.

  3. Pour boiling water over the coffee until each person has a cupful.

  4. Allow the coffee to filter slowly, keeping it warm underneath.

  5. Serve immediately, diluting with boiled milk or cream if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coffee beans
Roasting develops the dark colour and characteristic aroma that define the coffee's flavour.
Boiling water
Extracts the soluble flavour compounds from the ground coffee as it passes through.
Milk or cream
Adds fat and softness, mellowing the bitterness of the brewed coffee.

The step that matters

Pour boiling water over the coffee. Water that is not near boiling extracts flavour slowly and weakly, while the coffee must filter slowly so it brews evenly without turning bitter from over-extraction.

Swap the beans

How well each one fits the dish's main ingredients (coffee, milk):

  1. Cocoafits better
  2. Peanutfits better
  3. Hazelnutfits better
  4. Beansthe original

Fit is the average pairing score against coffee, milk. Candidates are from the same food group and used in at least 100 recipes.
