Pickling and Catsups

Ingredients

Directions

  1. Bruise the black peppercorns, allspice, and cloves in a mortar.

  2. Add grated horseradish, mustard seed, chopped garlic, and table salt.

  3. Pour 3 pints of wine or cider vinegar over the mixture in an unglazed jar.

  4. Seal the jar tightly to prevent evaporation and place it by a fire for 3 days, shaking it frequently.

  5. Parboil the pickles in brine until scalded, then let them cool and drain completely.

  6. Run a rolling pin through the pickles to help them absorb the vinegar.

  7. Pack the pickles into jars and cover them with the warm spiced vinegar.
