Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Whip the egg whites

  1. Whisk the egg whites until very light and dry.

  2. Gradually add 1 teaspoon of sugar at a time while whisking hard until all the sugar is incorporated.

Add the almonds

  1. Blanch the almonds and cut them into pieces about the size of a pea.

  2. Mix the almond pieces with the egg mixture.

Shape and bake

  1. Drop spoonfuls of the mixture onto sheets of white paper.

  2. Bake in a cool oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whisked into a light, dry foam that gives the cakes their airy structure.
Sugar
Sweetens the cakes and helps stabilize the whisked egg white foam.
Sweet and bitter almonds
Provide the main texture, body and nutty flavor of the cakes.

The step that matters

Adding the sugar gradually while whisking. Sugar added a little at a time dissolves fully into the egg whites, building a stable, glossy foam. Dumping it in at once can collapse the foam and weaken the structure the cakes rely on.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
