What each ingredient does

Flour
Thickens the cream into a smooth, pourable dressing as it cooks.
Boiling cream
Forms the liquid base that gives the dressing its richness and body.
Butter
Adds fat for richness and a smooth, glossy mouthfeel.

The step that matters

Cook the flour and cream paste. Flour thickens only when heated enough to swell its starch. Cooking for the stated 2 minutes after the paste is mixed helps remove any raw floury taste and sets the thickness before the butter is added.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (cream, flour, butter, lemon, pepper, mustard, olive):

  1. Capersfits about as well
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Thymefits about as well

Fit is the average pairing score against cream, flour, butter, lemon, pepper, mustard, olive. Candidates are from the same food group and used in at least 100 recipes.
