What each ingredient does

Beef cutlet
Is the main protein, which browns and firms as it cooks in the pan.
Butter
Melted fat conducts heat evenly and adds richness and browning to the cutlet surface.

The step that matters

Continue turning until the cutlet is done. Turning the cutlet repeatedly over gentle heat helps it cook evenly through without overcooking the outside. Leaving it in one place can scorch the surface before the centre is ready.

Swap the parsley

How well each one fits the dish's main ingredients (beef, butter, pepper):

  1. Parsleythe original
  2. Thymefits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against beef, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
