Scalloped Fish or Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and make the sauce

  1. Preheat the oven to 400°F (200°C).

  2. Butter scallop shells or ramekin cases and sprinkle a layer of breadcrumbs in each.

  3. In a saucepan, melt the butter, stir in the flour, then add the milk or fish stock and stir until it boils.

Assemble and bake

  1. Place a tablespoon of the sauce into each shell, add flakes of fish, and cover with breadcrumbs.

  2. Dot the top with small pieces of butter and bake for 6 minutes.

Serve

  1. Serve on a folded napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked fish
Provides the main body and flaky texture of the filling.
Butter
Adds richness and flavour, and helps the topping brown in the oven.
Flour
Thickens the melted butter and liquid into a smooth sauce that binds the filling.
Milk or fish stock
Forms the liquid base of the sauce, adding moisture and savoury flavour.
Breadcrumbs
Form a crisp, golden layer over the filling as it bakes.

The step that matters

Boiling the sauce. Flour thickens the liquid only once it has been cooked and boiled, as its starch swells and sets the sauce. If the sauce is not brought to a boil, it stays thin and will not hold its shape in the shells.
