Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Form the main body of the dish and release flavourful juices as they cook.
Butter
Adds richness and carries flavour when the mushrooms are cooked in it.
Flour
Thickens the cooking liquid into a smooth sauce when it is heated.
Stock or milk
Forms the liquid base of the sauce and adds moisture.

The step that matters

Stirring gently when the flour mixture goes in. Flour needs heat and stirring to thicken the liquid evenly, but rough stirring breaks the mushrooms apart. Gentle, steady stirring as it comes to a boil keeps the sauce smooth and the mushrooms whole.
