Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cream
- Whipped to soft peaks, it forms the light, airy body of the dessert.
- Gelatine
- Sets the liquid mixture so it holds its shape when turned out.
- Sherry or brandy
- Adds aroma and a warm, flavourful note to the cream.
- Sugar
- Adds sweetness to balance the richness of the cream.
The step that matters
Strain the gelatine mixture into the whipped cream. Gelatine must be fully dissolved and liquid when added; if it is lumpy or cooled and stiff, it will form strands or specks instead of blending evenly. Gentle folding keeps the air trapped in the cream so the set dessert stays light.
