Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped to soft peaks, it traps air and gives the dessert a light, rich body.
Castor sugar
Adds sweetness and balances the richness of the cream.
Sheet gelatine
Sets the cream so it holds its shape when turned out of the mould.
Vanilla essence
Adds a warm, aromatic flavour to the cream.

The step that matters

Fully dissolve and strain the gelatine into the cream. Gelatine sets only when it is completely dissolved and evenly mixed. Lumps or undissolved pieces leave specks and weak patches, so the mould may not hold its shape when turned out.
