Ingredients

Directions

Prepare the garnish

  1. Prepare the garnish by cutting the cucumber into dice, balls, or fancy shapes. If using French beans, string them and cut into diamonds.

  2. Boil the cucumber or beans in salted water for 7 to 12 minutes until tender.

Make the soup

  1. Heat the stock in a pot.

  2. Add the cooked cucumber or beans to the stock.

  3. In a bowl, mix the egg yolks and cream.

  4. Strain this mixture into the pot.

  5. Cook gently for 2 to 3 minutes without boiling to prevent curdling.

  6. Season to taste and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the soup and add richness as they gently set with heat.
Cream
Adds richness and a smooth, velvety texture to the soup.
Stock
Forms the liquid base that carries the flavor of the soup.

The step that matters

Cook gently for 2 to 3 minutes without boiling. Egg yolks thicken by gentle heat, but high heat makes their proteins tighten and scramble, causing curdling. Keeping the soup below a boil keeps it smooth.
