Ingredients

Directions

Prepare the meat

  1. Cut the pork or veal into pieces, including both fat and lean parts.

  2. Sprinkle the pepper, salt, and herbs over the meat.

Mince and shape

  1. Pass the seasoned meat through a mincing machine twice.

  2. Tie the sausage skin to the machine's muzzle and allow the seasoned meat to pass through.

  3. Twist the skins every three inches to form divisions.

  4. If no sausage skins are available, shape the meat into small balls.

Coat and fry

  1. Dip the balls in beaten egg.

  2. Dip the balls in pounded gluten crumbs.

  3. Fry the coated balls gently.

What each ingredient does

Pork or veal
Its fat and lean parts together keep the sausage moist and rich in flavor.
Mixed herbs or sage
Adds the aromatic, savoury flavour that defines the sausage.

The step that matters

Fry the coated balls gently. The egg and crumb coating can brown or separate in very hot fat before the meat inside is cooked through. Gentle heat lets the centre cook evenly while the coating sets.

Swap the white pepper
