What each ingredient does

Cream
Whipped to soft peaks, it forms the light, rich body of the dessert.
Sheet gelatine
Sets the cream so it holds its shape when turned out of the mold.
Almonds
Add nutty flavor and a slight texture to the cream.

The step that matters

Strain the melted gelatine into the cream mixture and stir well. Gelatine must be fully dissolved and evenly mixed before setting. Lumps or unmixed gelatine leave weak, uneven patches, and the cream sets unevenly once chilled.
