Ham Ham with Madeira

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. If the ham is briny, soak it in water for a few hours.

  2. Trim off the knuckle or bone if desired.

  3. Simmer the ham in water for 1 hour.

  4. Drain the ham and remove the skin.

  5. Cover the ham with bread crumbs and pour Madeira wine over it.

  6. Place the ham in a hot oven at 400°F (200°C) to brown and crisp.

  7. Garnish with greens or serve with dressed Windsor beans.
