Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
The main meat; cooking them whole keeps the flesh moist and tender.
Butter
Stuffed inside and frothed on top, it adds moisture, richness and golden browning.
Bread crumbs
Absorb the butter and juices inside the bird, keeping the stuffing moist and lightly textured.
Flour
Dusted on the skin, it helps the surface brown and crisp in the oven.

The step that matters

Washing the pigeons without breaking the intestines. A torn intestine releases bitter contents and odour into the cavity and meat, which spoils the flavour of the whole bird.
