To Stew Oysters, Cockles, or Mussels

Ingredients

Directions

  1. Soak the oysters in water for two minutes to make it easier to remove the gills.

  2. Wash the oysters in their own water, changing it every twelve hours.

  3. Feed the oysters with oatmeal or flour sprinkled in the water, or with white wine and bread crumbs.

  4. When ready to eat, open the oysters and consume them with their own liquor or sprinkle with black pepper.

  5. If the oysters are too cold, add a splash of vinegar.
