Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the broth into a firm, sliceable jelly as it cools.
Eggs
Their whites cloud and trap impurities, so straining yields a clearer jelly.
Rum or brandy
Adds aroma and flavour while contributing a little alcohol to the finished jelly.

The step that matters

Simmer slowly after boiling. Once the mixture boils, the egg whites coagulate and collect impurities. Gentle simmering lets them form a raft that filters clearer when strained. Boiling hard can break up the raft and leave the jelly cloudy.
