  1. Remove the twine from the beef and place it in the center of a serving dish.

  2. Surround the beef with carrots and turnips, cut with a fruit corer, and arranged au jus or glazed.

  3. Optionally, run skewers through pieces of carrot and turnip, then stick them into the beef.

  4. Serve warm, optionally garnished with sprigs of parsley or surrounded by fried potatoes and gravy.

  5. For variations, serve with glazed onions, puree of celery, cauliflowers, or chestnuts, decorated with skewers if desired.
