What each ingredient does

Smoked beef tongue
Provides the main meat, whose smoky flavour and firm texture carry the dish.
Onions
Add mild sweetness and aroma to the simmering liquid.
Garlic
Adds aromatic pungency that mellows during the long simmer.

The step that matters

Simmering slowly for about 6 hours. Long, gentle simmering breaks down connective tissue so the tongue becomes tender. Boiling hard can toughen the meat and make it dry, so the liquid should stay at a gentle simmer and be topped up if it reduces.

Swap the clove
