Wine Jelly

Ingredients

Directions

Prepare

  1. Soak the gelatin in cold water for about 30 minutes.

  2. In a saucepan, combine the eggs, sugar, and cold water. Beat the mixture lightly to break the eggs and mix well.

Make and set the jelly

  1. Add the soaked gelatin, burnt sugar, and essence of rum to the mixture. Stir until everything is well combined and dissolve the gelatin.

  2. Pour into a mold and refrigerate until set.

What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Eggs
Add body and richness to the mixture, helping it set softly.
Sugar
Adds sweetness and balances the flavour of the jelly.

The step that matters

Dissolving the gelatin fully. Gelatin must be completely dissolved into the warm mixture before chilling. Undissolved granules leave gritty specks and weak patches, so the jelly may not set evenly.
