Why it works: Chicken and pork match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 5,417 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Ingredients
Directions
Cut up the chickens and place them in a kettle with enough cold water to cover.
Add a little coarse sea salt or sliced salt pork if desired.
Boil until the chicken is tender.
Remove the chicken, cut it up, and add it to a part of the head of celery.
Prepare hot baking powder biscuits and break them open on a platter.
Place the chicken on top of the biscuits.
Thicken the gravy with flour moistened with water or milk, then pour it over the chicken and biscuits.
