Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Dredge the beef lightly with flour and season with salt and pepper.

Roast

  1. Place the beef in the oven and baste frequently while roasting.

  2. Roast for 15 minutes per pound for rare, longer for well done.

Make the sauce and serve

  1. For the sauce, combine drippings from the pan with Harvey or Worcestershire sauce and tomato ketchup.

  2. Thicken the sauce with browned flour and serve in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Is the main protein; its cooking time sets how rare or well done the meat becomes.
Flour
Light coating on the beef that helps it brown; browned flour thickens the sauce.
Harvey or worcestershire sauce
Adds savory, tangy depth to the sauce made from the pan drippings.
Tomato ketchup
Adds sweetness and acidity to the sauce, rounding out its flavor.

The step that matters

Basting during roasting. Frequent basting spreads drippings over the surface, keeping it moist and promoting even browning, while the total time depends on the cut's weight and desired doneness.

Swap the tomato

How well each one fits the dish's main ingredients (beef, flour, pepper, sauce, ketchup):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, sauce, ketchup. Candidates are from the same food group and used in at least 100 recipes.
