Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt
Draws moisture out of the meat and helps preserve it while curing.
Molasses
Adds sweetness and helps flavour and colour the surface of the ham.
Saltpetre
Helps preserve the meat and gives the cured ham its characteristic pink colour.
Brine
Carries salt into the meat during the long submersion, seasoning and curing it evenly.

The step that matters

Rubbing the cure into the bones. Salt cure penetrates slowly, and areas near the bone and in recesses cure last and can spoil. Thorough, repeated rubbing gives the mixture the chance to reach these spots evenly before the ham rests.
