Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Form the bulk of the pickle and soften slightly when salted and boiled.
Onions
Add savoury body and flavour that mellows during salting and simmering.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp tang.
Brown sugar
Adds sweetness and balances the sharpness of the vinegar.
Coarse sea salt
Draws water out of the vegetables, firming them and reducing moisture in the jars.

The step that matters

Drain the salted vegetables thoroughly before boiling. Salt draws water out of the tomatoes and onions; if they are not drained well, the excess liquid dilutes the vinegar syrup and weakens its preserving effect and flavour.

Swap the tomato

How well each one fits the dish's main ingredients (onion, vinegar, sugar, mustard, clove, ginger, cinnamon):

  1. Horseradishfits better
