What each ingredient does

Rich cream
Whipped to stiff peaks, it gives the dessert its light, airy, creamy body.
Eggs
Thickened over hot water into a custard that gives the filling its body and richness.
Gelatin
Sets the custard so the filling holds its shape when unmolded and chilled.
Milk
Forms the liquid base of the custard, adding moisture and softness.
Sponge cake or ladyfingers
Forms the outer shell, giving structure and a soft, absorbent texture against the filling.

The step that matters

Cook the mixture over hot water until it thickens into a custard. Egg proteins set as they heat, so cooking gently over hot water until it thickens prevents curdling and keeps the custard smooth before the gelatin and cream are folded in.
