What each ingredient does

Mutton chops
The main protein; trimming fat and flattening them gives even cooking and a tender bite.
Butter
Adds richness and carries flavour, helping the bread crumbs brown on the surface.
Bread crumbs
Form a crisp, golden crust that helps seal in juices during broiling.

The step that matters

Broiling the coated chops over low heat. Low heat cooks the thick meat through without scorching the bread crumb coating before the interior is done. Turning once helps both sides brown evenly.
