Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cakes together as they bake.
Butter
Rubbed into the flour to add richness and a tender crumb.
Eggs
Bind the mixture and add structure and richness to the cakes.
Baking powder
Releases gas during baking so the cakes rise and stay light.
Castor sugar
Adds sweetness and helps the cakes brown as they bake.
Sultanas
Add sweetness, chewiness and moisture throughout the cakes.

The step that matters

Shaping the rough lumps. The mixture is stiff and should be piled into rough heaps, not smoothed. Leaving the rocky shape gives the cakes their texture and keeps them from spreading flat and dense in the oven.

Swap the currant

How well each one fits the dish's main ingredients (flour, butter, sugar, egg, milk):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against flour, butter, sugar, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
