Rolled Ribs of Beef, Roasted

Ingredients

Directions

  1. Order the butcher to remove the bones and roll the beef into a round shape, securing it with skewers and a broad piece of tape.

  2. Place the beef 18 inches from a large fire until partly cooked, then gradually move it closer to the fire.

  3. Put the beef in a pan and baste it as soon as the dripping melts, then every half hour.

  4. Twenty minutes before removing from the fire, dredge the beef with flour and baste with a little butter.

  5. Remove the skewers and tape, and secure the beef with a silver skewer instead.

  6. Serve with good gravy over the meat.
