Jam Sandwiches

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

  1. Make puff paste as in receipt 2 and roll it out thin.

  2. Rub the paste on a baking sheet.

  3. Lay half the paste on the sheet.

  4. Spread a layer of preserve on the paste.

  5. Cover the preserve with the remaining paste.

  6. Press the edges together and slightly all over.

  7. Mark it in equal divisions.

  8. Bake for 20 minutes in a moderate oven (350°F / 175°C).

  9. Break into neat oblong sandwiches at the marks.

  10. Serve with powdered sugar on top.
