Ingredients

Directions

The book says “a warm oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch and slice the almonds, then add them to the mixture.

  2. Beat the eggs and add them to the mixture.

  3. Put the paste in a shallow buttered tin.

Top and bake

  1. Beat the egg whites and brush them over the top.

  2. Strew the sliced candied peel and sprinkle a little sugar over the almonds.

  3. Bake for 15 minutes in a warm oven at 350°F (175°C).

What each ingredient does

Sweet almonds
Provide the main bulk and nutty flavour of the cake's paste.
Eggs
Bind the mixture and give the cake structure as they set in the oven.
Egg white
Forms a glossy, lightly crisp coating on the top as it bakes.
Sifted sugar
Adds sweetness and helps the top brown lightly as it bakes.
