Why it works: Almond and pistachio match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 693 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Ingredients

Directions

Prepare the almonds

  1. Boil the almonds in water and peel them.

  2. Wash and dry the almonds thoroughly.

  3. Slice the almonds lengthwise and keep them hot in the oven.

Make the caramel

  1. In a copper pan, combine sugar with a little water and boil until it forms a thick, clear syrup.

  2. Add the hot almonds and pistachios to the syrup, stirring constantly.

  3. Continue boiling until the sugar turns a good caramel or dark yellow color.

Set in the mold

  1. Oil and drain a tin mold.

  2. Press a layer of hot almonds into the bottom using a spoon dipped in almond oil.

  3. Quickly add another layer of almonds, as the sugar hardens immediately.

  4. Keep the almonds hot and fill the mold.

  5. Tap the end of the mold to turn it out once set.

What each ingredient does

Sweet almonds
Provide the main nutty body and crunchy texture of the nougat.
Sugar
Forms the clear syrup that cooks to caramel and binds the almonds as it sets.
Pistachio nuts
Add flavor and color contrast alongside the almonds.

The step that matters

Quickly add another layer of almonds. Sugar syrup hardens almost immediately as it cools, so layers must be added while the almonds and syrup are still hot. Otherwise the layers will not bond and the nougat may set unevenly.

Swap the nuts

How well each one fits the dish's main ingredients (almond, pistachio, sugar):

  1. Cashew nutfits better
  2. Brazil nutfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against almond, pistachio, sugar. Candidates are from the same food group and used in at least 100 recipes.
