What each ingredient does

Beef
The main cut that the cure penetrates, firming and seasoning the meat as it cures.
Saltpetre
Helps the meat keep its pink colour and resist spoilage during the long cure.
Brown sugar
Adds sweetness and moisture, balancing the salty cure.
Coarse sugar
Adds sweetness and helps balance the salt in the cure.

The step that matters

Before boiling, wash off the salt.. The cure leaves salt on the surface and in the outer layers of the meat. Rinsing removes the excess so the finished beef is not overly salty.
