What each ingredient does

Lean steak (top round)
Provides the beef flavor and protein that are released into the cold juice.

The step that matters

Soaking the minced steak in cold water. Cold water slowly draws flavorful juices out of the meat fibers while keeping the mixture cool and fresh. Warm water would release juices faster but could also let the meat spoil, so keep it chilled for the full soak.
